My Favoutrite Recipes

We will be posting recipes from time to time on the blog, but we also want to know your favourite dishes.

Try to make it have some relevance to gardening (ie have some form of vegetable, pulse or salad that you can grow). If you can’t never mind -just send it in anyway! It will be interesting to see what you have to offer everyone else….

Well, one of my favorites this time of year is a Mediterranean themed Jersey Royal salad. It combines 2 of my favorites – spuds and Mediterranean food!!

I make it with Jersey Royals, red and green peppers, sun dried tomato paste, mozzarella chunks, olives (black or green – what ever takes your fancy) basil leaves, and plenty of olive oil, salt and pepper.

Yum Yum!

I am a fan of my Potato and Onion omelette cake that I invented whilst at University and it was the only thing I had in my cupboard !
Fry onions (little bit of Olive oil) in a frying pan. Cook and Mash some potatoes (Jersey ones are best) and put in an egg and some herbs (Parsley) bit of seasoning then put your fried onions in with the mix . Give it a stir, fluff it up and then put back into the pan. Give it a pat and push up the edges. Fry on a gentle heat for about 8 minutes or until you can see it is browning. Flip it over (tip: slide onto a plate) or put under the grill for about 8 mins. Cut it into wedges, pile them up, put a bit of parsely on top and share with your friends. Great after a night out !

Sounds yummy! I’d probably add some of those Italian sausages & mushrooms though, especially after a night out. Haven’t had an omelette for ages.
